If you open a deal sheet flat version you have the option to click on the "Reset Workflow" button at the top of the page.

Users would benefit from having a feature to this in bulk (like bulk locking/unlocking deals).

Additionally, it would be beneficial to give users the option to clear previous steps from the approval workflow section to avoid clutter.
